Pan-fried Skate, whole grain mustard sauce, boiled new potatoes

Ballotine of Whiting wrapped in pancetta, split peas, seared pak choi and tartar espuma

Lamb shoulder, aubergine bayildi, couscous, coriander & mint yoghurt
